- 5 pounds green plantains
- 2 TB Mixed Nuts Spice

PROCEDURE
- Peel green plantains
- Cut the top of peeled plantain on a bias about 2.5 inches long
- Using the waffle side on the french mandolin, slice the green plantain. 1/8 inch thick and 2.5 inches long
- Drop the sliced plantains in the 350 degrees fryer one at the time.
- Move them around until crispy and golden brown. About 3-5 minutes
- Take crispy plantains out of the fryer and transfer to a mixing bowl.
- Sprinkle spice and toss.
- Transfer to sheet tray to cool to room temperature
- Transfer to quarts. Keep them with a tight lid.
