  • 5 pounds green plantains
  • 2 TB Mixed Nuts Spice

PROCEDURE
  • Peel green plantains
  • Cut the top of peeled plantain on a bias about 2.5 inches long
  • Using the waffle side on the french mandolin, slice the green plantain. 1/8 inch thick and 2.5 inches long
  • Drop the sliced plantains in the 350 degrees fryer one at the time.
  • Move them around until crispy and golden brown. About 3-5 minutes
  • Take crispy plantains out of the fryer and transfer to a mixing bowl.
  • Sprinkle spice and toss.
  • Transfer to sheet tray to cool to room temperature
  • Transfer to quarts. Keep them with a tight lid.
