2 lb apple golden delicious (once clean and diced was 1.6 lb)
1 pinch saffron
3 oz butter
2 oz sugar
Peel, quarter, core, and dice the apples.
Put them in a medium saucepan, along with the butter, saffron and sugar.
Cover and cook over medium heat, stirring occasionally, until the mixture is dry, about 18 minutes.
Blend on high speed until very smooth.
Cool completely.
