- 4 cups mirin
- 2 cups sugar
- 1/2 cup sambal
- 1/2 cup minced garlic
- 1/2 cup minced ginger
- 1/2 cup fish sauce
- 1/4 cup lime zest
- 1/4 cup minced lemongrass
- 1/4 cup lemon zest
- 1/4 cup lime juice
- 1/4 cup lemon juice
- 3 TB cornstarch
- 1/4 cup water

PROCEDURE
- In a large pot, combine mirin, sugar, garlic, ginger, sambal an fish sauce
- Bring to boil
- Turndown to simmer, reduce by 1/3
- Combine cornstarch and water to make a slurry
- Add slurry to the pot.
- Bring to boil for 30 seconds
- Off the fire, add zests, juices and lemongrass.
- Mix well
- Transfer to quarts
- Label, date and refrigerate.
