  • 4 cups mirin
  • 2 cups sugar
  • 1/2 cup sambal
  • 1/2 cup minced garlic
  • 1/2 cup minced ginger
  • 1/2 cup fish sauce
  • 1/4 cup lime zest
  • 1/4 cup minced lemongrass
  • 1/4 cup lemon zest
  • 1/4 cup lime juice
  • 1/4 cup lemon juice
  • 3 TB cornstarch
  • 1/4 cup water

PROCEDURE
  • In a large pot, combine mirin, sugar, garlic, ginger, sambal an fish sauce
  • Bring to boil
  • Turndown to simmer, reduce by 1/3
  • Combine cornstarch and water to make a slurry
  • Add slurry to the pot.
  • Bring to boil for 30 seconds
  • Off the fire, add zests, juices and lemongrass.
  • Mix well
  • Transfer to quarts
  • Label, date and refrigerate.
