ingredients
- Extra Virgin Olive Oil - 1 Quart
- Lemon Extra Virgin Oil - 1 Quart
- Dry Guindilla - 20 grams
- Garlic Sliced - 6 oz
- Lemon skins - 6 oz
- Thyme Sprigs(stem on)- 2 oz
- Kosher Salt - 1 tsp

PROCEDURE
- Gather all ingredients
- Using a spice grinder, grind the guindilla to a fine powder
- In a sauce pot, add all ingredients.
- Over low-medium flame, bring the oil mixture to a soft simmer and simmer for 45 minutes to allow the flavors to meld. DO NOT BROWN THE GARLIC
- After 45 minutes, turn heat off and allow the oil to cool to room temp.
- Strain the oil and reserve for service in a squeeze bottle
