ingredients
  • Extra Virgin Olive Oil - 1 Quart
  • Lemon Extra Virgin Oil - 1 Quart
  • Dry Guindilla - 20 grams
  • Garlic Sliced - 6 oz
  • Lemon skins - 6 oz
  • Thyme Sprigs(stem on)- 2 oz
  • Kosher Salt - 1 tsp

PROCEDURE
  • Gather all ingredients
  • Using a spice grinder, grind the guindilla to a fine powder
  • In a sauce pot, add all ingredients.
  • Over low-medium flame, bring the oil mixture to a soft simmer and simmer for 45 minutes to allow the flavors to meld. DO NOT BROWN THE GARLIC
  • After 45 minutes, turn heat off and allow the oil to cool to room temp.
  • Strain the oil and reserve for service in a squeeze bottle
