  • Boggie Bread Sourdough - As needed

PROCEDURE
  1. Pull bread from packet and place on a sheet pan
  2. Cook in oven at 400 degrees, no steam, high fan for 12-14 minutes
  3. Remove from oven and allow to cool to room temperature
  4. With very sharp bread knife, slice into 1 inch thick pieces
  5. Store in a cambro and reserve for service
CRITICAL CONTROL POINT
  • Bread should be very crispy on outside
  • Do not crush the bread when slicing
  • UTILIZE THE LONGEST MIDDLE SLICES FOR MATRIMONIOS AND ANY TOSTA'S
  • UTILIZE THE SHORTER PIECES FOR MEJILLONES, GAMBAS AND PINTXOS
  • You should be able to get 12 slices from each bread
