- Boggie Bread Sourdough - As needed

PROCEDURE
- Pull bread from packet and place on a sheet pan
- Cook in oven at 400 degrees, no steam, high fan for 12-14 minutes
- Remove from oven and allow to cool to room temperature
- With very sharp bread knife, slice into 1 inch thick pieces
- Store in a cambro and reserve for service
CRITICAL CONTROL POINT
- Bread should be very crispy on outside
- Do not crush the bread when slicing
- UTILIZE THE LONGEST MIDDLE SLICES FOR MATRIMONIOS AND ANY TOSTA'S
- UTILIZE THE SHORTER PIECES FOR MEJILLONES, GAMBAS AND PINTXOS
- You should be able to get 12 slices from each bread
