• 230g sliced garlic cloves
• 130g kosher salt
• 60g sweet, smoked paprika
• 6g ground cayenne
• 6g dried oregano
• 224g extra virgin olive oil

PROCEDURE
  1. Combine all the ingredients in the bowl of the robo coupe.
  2. Purée until smooth.
  3. Reserve to marinade steaks.

MARINADE STEAKS:

  1. Rub both sides of each 10-12oz steak with 30g of the marinade
  2. Marinade for 18-24 hours.
  3. Marinade steaks the night before for the following night's service.
  4. Steaks should not sit marinated for more than 2 days.
