ADDITIONAL PREP RECIPE
ingredients
- 10# Mixed Setas
- 1/4 cup thin slices of garlic
- 1 cup olive oil
- 5 sprig of Thyme
- 4floz of lemon juice
- 4floz of sherry vinegar
- Salt to taste

PROCEDURE
- In a large shallow pot, sweat garlic in olive oil
- Add Setas Portion and season with salt, add thyme
- Saute until the mushrooms color well and give off most of their water
- Deglaze with sherry vinegar and lemon juice

- Mushrooms must be checked and rechecked for proper seasoning
- Color must be caramelized
