- 26 fl oz Extra Virgin Olive Oil
- 3 oz Fresh rosemary
- 8 oz Garlic cloves

PROCEDURE
- In a medium size pot combine all ingredients
- Cook over very low heat for 30 minutes.. Garlic should be soft with very little color
- Remove rosemary from oil
- Strain the oil into a 1/6 pan or quart container and save the confit garlic into a 1/9 pan or pint container
- Label and store
