600g sweet red cherry tomatoes, halved

60g extra virgin olive oil

5g kosher salt

1g cracked black pepper

25g finely minced garlic

PROCEDURE
  1. Combine all the ingredients in a bowl, gently toss to coat the tomatoes well.
  2. Lay the tomatoes out on a parchment-lined sheet tray, do not crowd the tray.
  3. Roast at 300 degrees, low fan, no humidity, for 45-60 minutes. Tomatoes will hold shape. (see photo)
