PROCEDURE
  1. Using a knife, scrape off as much excess left over meat and sinew as possible from the bone
  2. Sprinkle salt over the cut side of the bone
  3. Roast at 375, high fan, no humidity for 8 minutes
  4. Cool, label and reserve for service
