  • 1 pint Rice Bomba
  • 3 qt Chicken stock

  • Put the chicken stock to boil in a large pot.
  • Once boiling cook rice for 6 minutes (use a timer).
  • Strain in a chinoise, and cool down quick in sheet trays with ice underneath. (save the stock for service)
  • Set aside in refrigerator

Make sure is 6 minutes exactly! otherwise your rice will be overcooked.
