ingredients
  • 4 bags piquillos (20lbs)
  • 1 pint sugar

PROCEDURE
  • Drain piquillos (save the liquid!).
  • Sear piquillos hard on the plancha.
  • Mix sugar with drained liquid and a little water.
  • Put piquillos back into the liquid and cover with foil.
  • Roast in 350ºF oven for 10 minutes.
  • Cool in liquid, reserve.
