PROCEDURE
- Peel the potato
- Using the smallest round holes on a hand grater, grate the potatoes into a mixing bowl
- Rinse the shoestring potatoes under cold water until water runs clear to remove all the starch
- Fry the potato at 350 degrees for 1 minute or until crispy and golden brown
- Use a skimmer to remove the fries from the fryer and put into a bowl with paper towels to absorb the oil. Season with kosher salt and reserve for service
