ADDITIONAL PREP RECIPE

- 3 pieces of radicchio
- 12 ea heads of butter lettuce
- 1 cs of red oak
- 1 cs gem lettuce

PROCEDURE
- Cut radicchio in quarts or each depending of the size. Remove the core white inside, separate the leaves and put in a container.
- Cut Gem lettuce removing only the bottom of the core. Remove the first dark and soft leaves. Separate the rest leaves and put in the same container than radicchio.
- Cut the red Oak from the bottom of the stem. separate leaves and add to the same container of gem lettuce and radicchio.
- Wash the lettuces adding some ice so they get super crunchy. Remove from water and dry out in salad spinner. put the lettuce mix in two separate containers.
- Remove the core of butter lettuce, separate the leaves and mix with the rest of the lettuces & put in fridge.
