- Ground Cumin - 2 oz wt
- Smoked Sweet Pimenton - 1 oz
- Kosher Salt - 2oz
- Thyme Sprigs - 2oz
- Rosemary Sprigs 2oz

PROCEDURE
- Cut each presa in half, length wise
- Cut each half into 2 equal pieces- Pieces should weigh approximately 6 oz each
- Put into a metal half pan and pour over the marinade
- Allow to marinade overnight
