  • Blended Olive Oil- 1 Qt
  • Ground Cumin - 2 oz wt
  • Smoked Sweet Pimenton - 1 oz
  • Kosher Salt - 2oz
  • Thyme Sprigs - 2oz
  • Rosemary Sprigs 2oz

PROCEDURE
  1. Cut each presa in half, length wise
  2. Cut each half into 2 equal pieces- Pieces should weigh approximately 6 oz each
  3. Put into a metal half pan and pour over the marinade
  4. Allow to marinade overnight
