- Crab Meat Claw - 1 lb
- Crab Meat Super Lump - 1 lb
- Lemon Oil - 2 oz fl
- Extra Virgin Olive Oil - 4 oz fl
- Ponzu - 2 oz fl
- Harissa Seasoning - 1.5 tsp
- Ground White Pepper - 1/2 tsp\
- Whole Grain Dijon - 2 TBSP
- Kosher Salt - 1 tsp
- Minced Calabrian Chiles - 8 grams

PROCEDURE
- In a large mixing bowl, combine all ingredients EXCEPT the crab meat
- After seasonings are mixed, add the crab meat and GENTLY fold together with hands to incorporate well
- Portion into 1/3 pans, label and reserve in cooler for service
