  • Crab Meat Claw - 1 lb
  • Crab Meat Super Lump - 1 lb
  • Lemon Oil - 2 oz fl
  • Extra Virgin Olive Oil - 4 oz fl
  • Ponzu - 2 oz fl
  • Harissa Seasoning - 1.5 tsp
  • Ground White Pepper - 1/2 tsp\
  • Whole Grain Dijon - 2 TBSP
  • Kosher Salt - 1 tsp
  • Minced Calabrian Chiles - 8 grams

PROCEDURE
  • In a large mixing bowl, combine all ingredients EXCEPT the crab meat
  • After seasonings are mixed, add the crab meat and GENTLY fold together with hands to incorporate well
  • Portion into 1/3 pans, label and reserve in cooler for service

  • Be careful not to break up the large chunks of crab meat too much. We want the chunks to be ver visable to the guest
