- Strawberries quartered - 1 Pint (12 oz wt)
- Sherry Vinegar - 4 oz fl
- Light Brown Sugar - 6 oz wt

PROCEDURE
- Combine the brown sugar and sherry and whisk to incorporate
- Place the quartered strawberries into a 1/6 pan
- Pour sugar/sherry mixture over strawberries
- Marinate overnight
- Label, refrigerate and reserve for service
