PROCEDURE
- Cut the potatoes in a French fries cutter
- Put in water and change the water until you make sure the water is clear
- Strain and put in the Fryer at 250F for 5 minutes
- Place in sheet pans
- And then transfer to quart containers
- Portion 9 oz of potatoes in qt containers
- Freeze
- Fry at 375 for service
