- 4.5kg / 10lb button mushrooms, cleaned & sliced
- 100g blended oil
- 453g finely diced yellow onion
- 28g peeled garlic cloves
- 478g white wine
- 20g thyme sprigs
- 3 tbsp Kosher Salt
- 1 tsp Ground Black Pepper

PROCEDURE
- In a large rondeaux, heat oil over medium heat. Add onions and sweat until translucent, about 8-10 minutes.
- Add mushrooms and cook for 3-5 minutes. Add garlic, thyme, salt, pepper, and white wine and cook for another 15-30 minutes until all the liquid is gone and the mushrooms are a little caramelized.
- Remove from heat and pulse in Robot Coupe until coarse and chunky. Make sure not to over process, we don't want a smooth puree.
- Set aside until ready to use.
