- 10 Pounds Pork Butts.
- Salt
- 4 cups adobo al pastor

PROCEDURE
- Take off 50% of outside fat.
- Dice pork. 1/4"
- Mix well
- Transfer to a mixing bowl and add salt. Mix well
- Add adobo pastor and mix well
- Storage, label, date and refrigerate
For Service:
-Sear pork on the plancha for 3 minutes and transfer to a pot.
-Add 2 cups of adobo pastor and 1/2 cup water.
-Cook for 40 minutes at low heat.
-Keep hot for service
CRITICAL CONTROL POINT
- Quick sear the pork on the plancha. Do not burn it.
- Low heat for the cooking of the pork
