  • 5ea Egg Yolks
  • 8each Eggs - A Heavy Eggs
  • 1.5lb Cheese - Ricotta
  • 1 each Vanilla Beans
  • 1 pint Milk Gallon
  • 1 cup Heavy Cream
  • 5oz GRANULATED SUGAR
  • 1oz GRANULATED SUGAR
  • 1 cup Water

For the caramel: Yield 12 crema catalana cassoulets.

  • 1 lb sugar
  • 1 cup water

PROCEDURE
  • Mix with a whisk all ingredients.
  • Prepare the crema catalana cassoulets with the caramel by cooking the sugar and the water until the starts getting color. Put a couple tbsp on each cassoulet or until the base is covered by sugar.
  • Let sit and then pour the ricotta mix.
  • Place in steam oven and cover with plastic film. cook at 200F for 45 minutes.
