8each Eggs - A Heavy Eggs
1.5lb Cheese - Ricotta
1 each Vanilla Beans
1 pint Milk Gallon
1 cup Heavy Cream
5oz GRANULATED SUGAR
1oz GRANULATED SUGAR
1 cup Water
For the caramel: Yield 12 crema catalana cassoulets.
1 lb sugar
1 cup water

PROCEDURE
Mix with a whisk all ingredients.
Prepare the crema catalana cassoulets with the caramel by cooking the sugar and the water until the starts getting color. Put a couple tbsp on each cassoulet or until the base is covered by sugar.
Let sit and then pour the ricotta mix.
Place in steam oven and cover with plastic film. cook at 200F for 45 minutes.
