- 1 qt Heavy Cream
- 2 pc Vanilla Beans
- 1 cup simple syrup
- 3.5oz Brown Sugar
- 2oz Cocao powder
- 1 tsp Salt
- 12 oz Chocolate 70%
- 2oz Butter

PROCEDURE
- Heat everything in a bot except chocolate and butter
- When everything is hot, mix in chocolate and melt very slowly
- Once chocolate is melted add butter and turn off heat, continue to mix until all is incorporated
- Cool down, put in quarts and refrigerate
