  • 50g / 1 ea whole egg
  • 10g whole peeled garlic clove
  • 40g/ 3 T white wine vinegar
  • 6g / 1 t Tobasco sauce
  • 16g / 1 T Dijon mustard
  • 225g / 1 cup blended oil
  • 150g extra virgin olive oil
  • 5g lemon juice
  • 15-30g / 1-2 T water, as needed to thin to desired consistency
  • Kosher Salt, to taste

PROCEDURE
  1. Combine the egg, garlic, vinegar, Tobasco sauce, dijon mustard in the Vita Mix pitcher.
  2. Blend until smooth.
  3. With the mixer on low speed, gradually drizzle in the blended oil & olive oil to emulsify.
  4. Add water, as needed to thin to a dressing consistency.
  5. Season with kosher salt and lemon juice.
