1 ea lobster

1/4 cup white wine vinegar

PROCEDURE

Cook lobster in boiling water,  salt and 1 bay leave.

Note: For every 4 oz of lobster one minute of cooking.

Remove from water and shock on iced salted water for at least 15 minutes.

Remove from ice water, split the tail in half and separate the cloves and knuckles

Set aside in refrigerator
