14g orange zest

10g lime zest

600g granulated sugar

1g finely ground star anise

PROCEDURE

NIGHT BEFORE:

  1. Microplane all of the citrus zest onto a parchment-lined sheet tray.
  2. Dry the citrus zest out overnight at room temperature.

NEXT DAY:

  1. Pulse the dried zest in a spice mill, to grind smaller -- DO NOT TURN TO A POWDER.
  2. Combine well with the granulated sugar.
