PROCEDURE
NIGHT BEFORE:
Microplane all of the citrus zest onto a parchment-lined sheet tray.
Dry the citrus zest out overnight at room temperature.
NEXT DAY:
Pulse the dried zest in a spice mill, to grind smaller -- DO NOT TURN TO A POWDER.
