1kg light blue agave

375g fresh lemon juice

200g fresh orange juice

PROCEDURE
  1. Combine all of the ingredients in a small rondeau.
  2. Bring to a full simmer for 10 minutes.
  3. Skim off the thick foam from the top of the syrup.
  4. Strain through a chinois & cool completely.
