Batter:

1.2 kg all purpose flour

100g granulated sugar

60g baking powder

6g ground cinnamon

6g kosher salt

750g whole milk

1.5 kg water

120g melted butter, cooled

20g vanilla paste

Finish:

Melted Butter

Cinnamon Sugar

PROCEDURE

    To make the batter:

      1. Combine all the dry ingredients (first 5 ingredients) in a large bowl or the bowl of the stand mixer.

  1. Combine all the wet ingredients (last 5 ingredients) in a separate large bowl or bain.
  2. Whisk the wet ingredients into the dry ingredients until smooth.
  3. Transfer the batter to a deep cambro. Refrigerate until service.

To cook the waffles:

      1. It is very important to reheat the waffle iron.

      2. The waffle iron has a pre-set temp of 400 degrees.

      3. Spray the hot waffle iron generously with non-stick spray.

  1. Ladle 140g / 5oz into the hot waffle iron.
  2. Cook for 3 minutes.
  1. Immediately brush the top of the waffle with melted butter.
  2. Dust the top of the waffle with cinnamon sugar.
