  • Ground Chicken - 6 lbs
  • Blended olive oil - .5 Cups
  • Sesame Oil - .5 Cups
  • Diced Button Mushrooms - 2 lbs (Pulse in Robot Coupe)
  • White Onion diced - 2 lbs
  • Garlic minced - 3 TBSP (27 grams)
  • Tamari - 1 Cup
  • Ponzu - 1/4 Cup
  • Sriracha - 3 TBSP
  • Honey - 3 TBSP
  • Ground Dry Ginger - 2 TBSP

PROCEDURE
  1. In a large round shallow pot over medium flame, heat the blended oil
  2. Once the oil is hot, add the ground chicken and get a good sear on all sides, then break up into small pieces and cook throughout.
  3. Once chicken is cooked, remove from the pot and set aside and lower the flame
  4. In the same pot over low flame, add the sesame oil and diced onion and cook until slightly translucent, about 4-5 minutes
  5. Increase heat to medium flame and add the diced mushroom and minced garlic and cook for another 4 minutes
  6. Add the dry ginger, tamari, ponzu, honey and sriracha to the mushroom mix, stir well, cook for 1 minute then turn off heat
  7. Add the cooked ground chicken to the pot and mix well
  8. Place on a sheet pan to cool rapidly
  9. Cover, label and reserve for service
CRITICAL CONTROL POINT
  • Mushroom and onions need to be very finely diced
