ingredients
- Ground Chicken - 6 lbs
- Blended olive oil - .5 Cups
- Sesame Oil - .5 Cups
- Diced Button Mushrooms - 2 lbs (Pulse in Robot Coupe)
- White Onion diced - 2 lbs
- Garlic minced - 3 TBSP (27 grams)
- Tamari - 1 Cup
- Ponzu - 1/4 Cup
- Sriracha - 3 TBSP
- Honey - 3 TBSP
- Ground Dry Ginger - 2 TBSP

PROCEDURE
- In a large round shallow pot over medium flame, heat the blended oil
- Once the oil is hot, add the ground chicken and get a good sear on all sides, then break up into small pieces and cook throughout.
- Once chicken is cooked, remove from the pot and set aside and lower the flame
- In the same pot over low flame, add the sesame oil and diced onion and cook until slightly translucent, about 4-5 minutes
- Increase heat to medium flame and add the diced mushroom and minced garlic and cook for another 4 minutes
- Add the dry ginger, tamari, ponzu, honey and sriracha to the mushroom mix, stir well, cook for 1 minute then turn off heat
- Add the cooked ground chicken to the pot and mix well
- Place on a sheet pan to cool rapidly
- Cover, label and reserve for service

- Mushroom and onions need to be very finely diced
