1 ea celery root
Cover with a mix at 50% of heavy cream and milk
Salt to taste
Cut the celery root in a medium size diced, about 1 inch.
Place in a pot and cover with a mix of milk and heavy cream.
Add salt
Cover with parchment paper on top.
Cook until the celery root is soft.
Strain the milk mixture off and set aside.
Blend in vita prep with 1 pint of the milk mix until very smooth.
Salt to taste.
Put in pint containers and set in refrigerator.
