- 1 each pineapple
- 1 cup sugar
- 1/4 cup cinnamon

PROCEDURE
- Peel pineapple.
- Coat pineapple with sugar and cinnamon mix.
- Place pineapple on an aluminum foil sheet and wrap the sheet over the pineapple and close it like a pouch.
- Bake at 350 degrees oven for 30 minutes. Cool the pineapple in the foil.
- Cut the pineapple 1/2" dice.
- Place single layer of diced pineapple on a sheet tray.and sprinkle sugar on top.
- Using the torch, caramelize pineapple.
- Transfer to a pan for service.
- Label and date
CRITICAL CONTROL POINT
- Only torch enough pineapple for the shift.
- Don't use torched pineapple the next day.
