  • 1 each pineapple
  • 1 cup sugar
  • 1/4 cup cinnamon

PROCEDURE
  • Peel pineapple.
  • Coat pineapple with sugar and cinnamon mix.
  • Place pineapple on an aluminum foil sheet and wrap the sheet over the pineapple and close it like a pouch.
  • Bake at 350 degrees oven for 30 minutes. Cool the pineapple in the foil.
  • Cut the pineapple 1/2" dice.
  • Place single layer of diced pineapple on a sheet tray.and sprinkle sugar on top.
  • Using the torch, caramelize pineapple.
  • Transfer to a pan for service.
  • Label and date
CRITICAL CONTROL POINT
  • Only torch enough pineapple for the shift.
  • Don't use torched pineapple the next day.
