- Beans Gigandes White - 2 lbs
- Caldo de Verdura - 3 qts

PROCEDURE
- In a large sauce pot, add the beans and the vegtable stock
- Turn heat on medium high flame
- Bring to a simmer
- Reduce the flame to medium and simmer gently for about 45-55 minutes
- Check beans after 45 minutes. Beans should be tender but firm enough to hold there shape
- Remove from heat and cool with an ice wand. DO NOT DISCARD THE COOKING LIQUID
- After liquid and beans are cold completley, store in a metal 1/6 pan, label and reserve for service
