  • 4 Qt water
  • 2 Qt GLUTEN FREE soy sauce
  • 2 cups sugar
  • 1 cup salt
  • 2 cup sugar
  • 7 each bay leaves
  • 1/4 cup coriander seeds
  • 1/4 cup black peppercorns

PROCEDURE
  • Using a cheesecloth, make a sachet with bay leaves, coriander seeds and black peppercorns.
  • In a large pot combine sache and rest of ingredients.
  • Bring it to a boil. Transfer to a mixing bowl and chill on an ice bath until reaches 40 degrees.
  • Storage, label, date and refrigerate.
