  • Blueberries - 4 Pints
  • Water - 1 Cup
  • Light Brown Sugar - 1 Cup

PROCEDURE
  1. Combine all ingredients in a sauce pot and mix well
  2. Cook over low heat until mixture reduces by about half to a loose syrup
  3. Cool, portion and label
CRITICAL CONTROL POINT
  • Sauce should be just thick enough to coat the back of a spoon but not jammy
  • Stir regularly so not to scorch the bottom of the sauce
  • Try not to break up the blueberries too much. We still want chunks
