660g Blueberries
120g Sugar
50g Lemon juice
75g Water
10g Cornstarch
1. Wash blueberries.
2. Combine the blueberries, sugar, lemon juice in a small pot.
3. Set the pot over low heat.
4. Bring to a simmer to dissolve the sugar & allow to simmer to reduce & cook blueberries.
5. Just as the blueberries begin to "pop" lower the heat.
6. Combine the water & cornstarch to make a "slurry" the consistency of milk.
7. Add the slurry to the blueberries & stir to combine. Simmer to thicken.
8. Cool in a hotel pan.
