PROCEDURE
- Cut the baguette into 2 pieces.
- Wrap each piece in plastic wrap.
- Place in the freezer for a minimum of 3 hours, or overnight.
- Slice the baguette on your meat slicer (clean well please!) on #3 setting. (see photo)
- Find 2 of your flattest sheet trays.
- Invert one sheet tray & line with a piece of parchment.
- Spray the parchment generously with pan spray.
- Lay out your bread slices on the parchment then top with another piece of parchment (see photo)
- Set another sheet tray on top of the parchment to keep everything flat.
- If your sheet trays are slightly bowed, weigh them with a heavy pot or more sheet trays.
- Bake in a 400º oven for 4-5 minutes, until golden brown.
