ingredients
- 2 each red onions
- 5 each Jalapenos
- 3 each serrano peppers
- 3 each avocados
- 6 each garlic cloves
- 1 bunch cilantro
- 1/2 cup lime juice
- 1 cup evaporated milk
- Salt and black pepper to taste

PROCEDURE
- Peel and quater onions.
- Take seeds and veins out of jalapenos and serrano peppers
- In a 350 degrees fryer, fry onions and peppers until they blister
- Add garlic and fry for another minute.
- Transfer vegetables to a sheet tray and cool of until 40 degrees
- Transfer vegetables to blender.
- Add lime juice, avocados and half of the milk and blend until smooth.
- Add cilantro and the rest of the milk and blend until smooth
- Transfer to quart containers
- Label, date and refrigerate.
CRITICAL CONTROL POINT
- Cool down fried vegetables to 40 degrees before making sauce. If not, the sauce will break.
- Don't overcooked vegetables in the fryer
