  • 2 each red onions
  • 5 each Jalapenos
  • 3 each serrano peppers
  • 3 each avocados
  • 6 each garlic cloves
  • 1 bunch cilantro
  • 1/2 cup lime juice
  • 1 cup evaporated milk
  • Salt and black pepper to taste

PROCEDURE
  • Peel and quater onions.
  • Take seeds and veins out of jalapenos and serrano peppers
  • In a 350 degrees fryer, fry onions and peppers until they blister
  • Add garlic and fry for another minute.
  • Transfer vegetables to a sheet tray and cool of until 40 degrees
  • Transfer vegetables to blender.
  • Add lime juice, avocados and half of the milk and blend until smooth.
  • Add cilantro and the rest of the milk and blend until smooth
  • Transfer to quart containers
  • Label, date and refrigerate.
CRITICAL CONTROL POINT
  • Cool down fried vegetables to 40 degrees before making sauce. If not, the sauce will break.
  • Don't overcooked vegetables in the fryer
