Classic dish that you'll find at most tapas bars. Very similar a frittata. The creamy garlic aioli is a great compliment to the eggs and potatoes.
WHAT'S IN A NAME?:
Tortilla translates to “little cake”. This is due to the pieces of sliced potato resembling layers of a cake.
A LITTLE HISTORY:
The tortilla, like many classic dishes, was born out of necessity. Legend has it while an Army General visited a house in Navarra the housewife had nothing available except eggs, potatoes and onions. The General loved it so much he popularized it. Another myth suggests that a Basque general invented the dish in order to quickly feed his troops. Every family tends to have their own recipe for it. The one thing that connects every recipe is how the Tortilla is flipped. This is done by taking the frying pan in one hand and holding a dish on top of it with the other. You then flip the pan leaving the tortilla on the dish and then slide it back on the pan to cook the bottom.

While the sandwich was technically similar to a French croque monsieur, the laws in Spain at the time did not allow for the use of French. Patrons opted to refer to the sandwich by the club's name, and the Bikini was born.

Croquette comes from the French word “croquer” which means “to bite or to crunch”.
A LITTLE HISTORY:
Croquetas originated in France in the 17th century and were called “croquettes”. The French base is mashed potato, but as the recipe traveled to Spain the ingredients changed and the base there is béchamel. They came about as a way to make sure no food went to waste, using scraps of meat or vegetables mixed with the béchamel to create various types of Croquetas.

A LITTLE HISTORY:
The tortilla, like many classic dishes, was born out of necessity. Legend has it while an Army General visited a house in Navarra the housewife had nothing available except eggs, potatoes and onions. The General loved it so much he popularized it. Another myth suggests that a Basque general invented the dish in order to quickly feed his troops. Every family tends to have their own recipe for it. The one thing that connects every recipe is how the Tortilla is flipped. This is done by taking the frying pan in one hand and holding a dish on top of it with the other. You then flip the pan leaving the tortilla on the dish and then slide it back on the pan to cook the bottom.
