Back in the 1930s, people still craved Sherry and cocktails were just coming in to fashion. Many classic cocktails from this time period featured all types of Sherry. This cocktail pairs several herbal and light elements with the richness of Cream Sherry. Dry, round and elegant - this is the perfect pre-dinner cocktail to get your appetite ready for a wide range of food.

RECIPE FOR COCKTAIL

In a  mixing glass, combine:      

3 oz Batched spirit mix    

1 heavy dash Suze Orange  Bitters      

stir for at least 20 seconds  to incorporate and chill properly        

Strain in to a Nick &  Nora glass. Garnish with a lemon peel cut with clean, angled edges

RECIPE FOR BATCH

In a quart  container mix      

          10 ounces  Cotswolds Gin      

          10  ounces Cesar Florido Cream Sherry      

           5 ounces Dolin Dry Vermouth        

          2 ounces Dry Curacao       

          2 ounces Anissette    

Label and Date container. This recipe will yield 8  cocktails    

Transfer to speed pour or bottle prior to service  - this should be stored in the speed rail. Label and date.
