The Big Manzana

In the history of wine, beer and liquor, people have always turned to their backyard for inspiration. Farming wheatled to beer, grapes to wine and local fruit to many different spirits. Our homage to all things local, the Big Manzanacelebrates two great local NY spirits, with local Fuji apple juice and just a hint of black pepper and sea salt.

RECIPE FOR COCKTAIL

In a  Metal Shaker, combine the following:          

2 oz Cocktail Batch          

1.5 oz Fuji apple juice          

.5 oz fresh lemon juice          

.3 oz black pepper syrup            

pinch of Maldon sea salt      

*shake for at least 15 seconds to  incorporate          

Strain in to a Tubo glass          

Fill with fresh ice        

Garnish: lemon peel,  laid flat across the top of the cocktail

RECIPE FOR BATCH

1. In a quart  container, combine:    ·    

           21 ounces  Greenhook Gin    ·    

           7 ounces Kings County Bourbon    

4.  Prepare 2 at a time, label and date. *Store refrigerated at the bar.                  

*Yield = 14 cocktails
