In a quart container combine:
1/2 cup thyme sprigs
2 cups whole butterfly pea flowers
Hot water from the espresso machine
Put thyme and butterfly pea flower in a quart container. Fill with hot water and let steep for 10 minutes.
Strain, making sure to squeeze all the liquid out of the flowers. Strain again through the fine bar strainer to remove any smaller bits
Label and date. Store refrigerated.
