10 sticks of cinnamon
2 cups white sugar
2 cups water
Place cinnamon sticks in the spice grinder and grind.
Place 5 at a time and pulse a few times until you have small pieces but it's not fully ground.
*do not use pre-ground cinnamon.
Bring all ingredients to a boil and then immediately remove from heat. Stir briefly.
Let cool for 10 minutes then strain and batch in quart containers. Label and date.
