Tools: Smallblender, quarter container, spoon, measuring cup, scale
To hydrate the Arabic Gum, use a 32 oz quarter container and add the following ingredients:
36 g Arabic Gum
60 g Hot water
Leave it in the fridge overnight or for 12 hours.
In a blender add:
360 g Sugar
0.6g Xanthan gum
200 g Cold water
Blend for 50sec.
Let it rest until the foam settles
In a quarter container add:
136 g Methyl-cellulose
100 g hot water
Mix and dissolve until there are no clumps
In a 2 liter measuring cup add all three mixes. Transfer the liquid to an airtight container. Label and reserve in the refrigerator.
