Hot Chocolate

  • 6oz/170g Dark Chocolate
  • 1 tbsp/15g Cocoa powder
  • 6 tbsp/96g Brown sugar
  • 3 cups/740g Whole milk
  • 1 cup/250g Heavy cream
  • 4 pc/20g Cinnamon sticks
  • 1 tsp Kosher Salt

preparation
  1. Place the pot on the hot plate and add cinnamonsticks. Turn up to medium heat and toast cinnamon until lightly smokey.
  2. Turn down heat.
  3. Add milk and heavy cream and use your whisk tostir the liquid. Do not let the liquid boil.
  4. Add dark chocolate, cocoa powder, and sugar tothe mixture.
  5. Continue to stir mixture under medium/low heatuntil all chocolate is melted. It should take approximately 10 minutes.
  6. Once all chocolate is melted and mixture isliquified add salt and cayenne, stir until all ingredients are fullyincorporated.
  7. Pour mixture into a container and cool it in an ice bath.
  8. Label, date and initial the batch.
