Hot Chocolate

- 6oz/170g Dark Chocolate
- 1 tbsp/15g Cocoa powder
- 6 tbsp/96g Brown sugar
- 3 cups/740g Whole milk
- 1 cup/250g Heavy cream
- 4 pc/20g Cinnamon sticks
- 1 tsp Kosher Salt

preparation
- Place the pot on the hot plate and add cinnamonsticks. Turn up to medium heat and toast cinnamon until lightly smokey.
- Turn down heat.
- Add milk and heavy cream and use your whisk tostir the liquid. Do not let the liquid boil.
- Add dark chocolate, cocoa powder, and sugar tothe mixture.
- Continue to stir mixture under medium/low heatuntil all chocolate is melted. It should take approximately 10 minutes.
- Once all chocolate is melted and mixture isliquified add salt and cayenne, stir until all ingredients are fullyincorporated.
- Pour mixture into a container and cool it in an ice bath.
- Label, date and initial the batch.
