- 750ml Armagnac Blanc
- 100g pears
- 100g turnips
Equipment:
- Water bath
- Vacuum seal bag
- Vacuum sealer
- Sous vide stick
- Sieve
preparation
- Combine all ingredients in a vacuum seal bag.
- Seal the bag.
- Place the sealed bag, sous vide stick into a water bath.
- Sous vide the mixture for a 1 hour and 30 minutes at 165F
- Strain the mixture and store in airtight containers.
