  • 2 Whole Grapefruit Peels
  • 1 Whole Lemon
  • 1 Whole Lime
  • 8oz Grapefruit Juice
  • 1oz Pink Peppercorns
  • 2.5 Cups White Sugar
  • 1 Cups water
  • Medium sized pot
preparation
  1. Wash and dry the fruits. With a zester, grate the skin of the lemon, lime and grapefruit. Add zest to the pot.
  2. Peel and section the fruit that was previously grated. *Make sure it doesn’t contain any pith (white skin) or the membrane
  3. Combine all ingredients except for the pink peppercorns
  4. Turn the heat to 300 degrees- bring to a boil and stir the juices for 25 min to reduce the water ratio in the pot, making a syrupy consistency.
  5. Lightly crush the pink peppercorns, add them to the pot and keep boiling for another 2 min.
  6. Remove from the stove and chill the syrup- strain once it is completely chilled and refrigerate
