- 2 Whole Grapefruit Peels
- 1 Whole Lemon
- 1 Whole Lime
- 8oz Grapefruit Juice
- 1oz Pink Peppercorns
- 2.5 Cups White Sugar
- 1 Cups water
- Medium sized pot
preparation
- Wash and dry the fruits. With a zester, grate the skin of the lemon, lime and grapefruit. Add zest to the pot.
- Peel and section the fruit that was previously grated. *Make sure it doesn’t contain any pith (white skin) or the membrane
- Combine all ingredients except for the pink peppercorns
- Turn the heat to 300 degrees- bring to a boil and stir the juices for 25 min to reduce the water ratio in the pot, making a syrupy consistency.
- Lightly crush the pink peppercorns, add them to the pot and keep boiling for another 2 min.
- Remove from the stove and chill the syrup- strain once it is completely chilled and refrigerate
