In a quart container, combine 2 cups white sugar with 2 cups boiling or hot water. Use the water from the espresso machine as this will create the right amount of heat to mix thoroughly. Stir until mixed.
Let sit for 3-4 minutes uncovered to bring the temperature down slightly. Add one large bunch of fresh basil leaves. Tear some of the leaves and stems in half to release more flavor. Cover and let sit for 3 hours. Strain off the basil, cover, label and date.
