Basque Sagardo/Sidra/Cider is not like English ciders! This has a funky, wild nose and a very dry palate. This type of cider is made in the north of Spain, France and beyond. Recommended for someone who likes the tart flavors of kombucha or sour beers and funky natural wine.
The nose is wild, with overripe apples and some sour funk. The palate is very lightly effervescent and very dry, with a crisp finish.
Spain's Basque region, overlooking the Bay of Biscay in the Atlantic Ocean, is famous for steak. The lush, green landscape is perfect for cattle grazing. This is also orchard country. Local apples are used to make a particular style of cider that accompanies the excellent steaks in local taverns across the region. These cider houses are known throughout the Basque region and nearby Asturias.
